Yemeni Coffee - Qishr
Mocha coffee takes its name from the Yemeni port city called
Mocha. Until just over one hundred years ago, it was a small port in Yemen
on the Red Sea. Some four centuries ago small quantities of this coffee with
a very fine flavor, grown on the hillsides surrounding the town, were exported
through this port. It was the first coffee enjoyed by Europeans. Soon after,
all imports from Arabia were classified as Mochas.
Yemeni Coffee (Qishr)
Servings: 4 servings
Ingredients:
- 1 cup cold water
- 6 teaspoons sugar
- 2 teaspoons ground ginger
- 6 teaspoons powdered coffee, not instant
Instructions:
1. Place water in a long handled Arabic coffee pot (a small saucepan
may be used).
2. Add remaining ingredients.
3. Over medium heat bring this mixture to a boil.
4. Remove from heat until the bubbles disappear.
5. Bring to boiling.
6. Repeat this process 3 times.
7. Pour into demitasse cups.
Serve!
